Brocato's Cookbooks -- Recipes from Shreveport's Landmark Restaurant. One of my projects is a cookbook of the recipes from Brocato's Restaurant on Kings Highway in Shreveport. It was Shreveport's oldest restaurant when it closed in late 2001. The information for the book was taken from small slips of paper written by Mr. Brocato and fixed to the wall in the kitchen explaining to the cooks how everything should be prepared. The cookbooks are $9.95 each plus $2.00 shipping and handling and may be ordered by e-mail or order them on Ebay. This book features specialties such as Red Snapper in the Bag plus directions on preparing many sauces and dressings.
